Pomelo Shrimp Salad

I was underweight for years but I gained ten pounds from my three-month US assignment. I’m now cramming to shed a few pounds since my big day is fast approaching. Sleep-deprived, busy with work and squeezing wedding preparations in between, getting enough exercise to get me back in shape is really hard. I strive to do a few minutes of crunches every morning and run on the treadmill for at least ten minutes when I have time. Crash diet is definitely out of the picture so I try really hard to just cut down my rice intake and eat healthier alternatives.

I had Pho Hoa’s Pomelo Shrimp Salad today for lunch. Shredded crab sticks, cucumbers and carrots, fresh and toasted onion rings, lettuce, crushed nuts, shrimp and pomelo arrived at my table along with a cup of sweet and tangy vinegar. I don’t think it was vinaigrette since I couldn’t taste any oil in it. The variety of colors was definitely an eye candy. Suffice to say, it was already a complete meal in one plate.

One more inch out of my waistline, and I'll be the happiest bride on earth. Haha! :)
