Je Tries to Bake: Chocolate Chip Muffins

Oh, yes yes yes! I bake too! I’m such a multitalented human being. Blog ko ‘to kaya pwedeng magbuhat ng sariling bangko. Harharharhar!

Even before I knew my way around cooking, I think I had become more comfortable in baking first. Since my mother is our home’s only cooking diva, it was kind of hard for me to penetrate her territory. But because I’m such a smart girl, I created my own. HAHAHA!!! My mom has zero knowledge in baking so she can’t boss me around when I’m making a mess out of the oven.

I have tried baking cookies and brownies, but it was my first time to try making muffins a couple of weeks ago. I initially baked chocolate chip muffins, but the first batch turned out to be a bit hard. My officemate Abby called it the Chinese Fighting Muffin, taken from the movie Charlie’s Angels. Ang reklamadoar pero inubos naman niya! =)) Joie, who is a more skilled baker than I am, told me to modify the recipe. She gave me pointers like increasing the liquid, lowering the heat and adding baking soda so I could achieve the right consistency of the batter. So here now is the improved version of Je’s Chinese Fighting Chocolate Chip Muffins! :p

INGREDIENTS:

1 2/3 cup flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1/3 cup + 2 tbsp sugar
1 cup + 1 tbsp milk
1/3 cup melted butter
1 egg
1 cup chocolate chips

DIRECTIONS:

1. Preheat oven to 180C.

2. Mix the flour, baking powder, baking soda, salt and cinnamon in a bowl.

3. In a separate bowl, whisk together the egg, butter, sugar and milk.

4. Mix the dry into the wet ingredients by batch. Stir until there are no more lumps.

5. Fold in the chocolate chips.

6. Evenly fill the muffin cups with the batter with the use of an ice cream scoop.

7. Bake for 18-23 minutes.

This recipe yields 12 muffins. :)
